Welcome to The Institute of Culinary Arts, South Africa’s leading training school for world-class chefs. Based in the famous Stellenbosch winelands, the ICA is internationally acclaimed for producing capable and industry-ready professionals of the highest calibre. Our comprehensive and specialised training is based on classic gastronomic principles, coupled with innovative thinking and creative flair.

Roots to Fruits

"Cultivating world-class chefs who breathe inspiration and innovation into the culinary world trained to challenge conformity by pushing boundaries, bringing with them excitement and a fresh approach to the world of food."

This was the dream that inspired Letitia Prinsloo to open the Institute of Culinary Arts (ICA) in 1995. Renowned for her unwavering commitment to quality, she was awarded the Chaine des Rotisseurs blazon for the famed restaurant she previously owned in Pretoria, La Maison. Her passion now bears the fruit with ICA being recognised as the countrys leading chef training facility.

The foundation which is laid through this training, conducted under an excellent tutor/student ratio of 1:7, allows students to explore new techniques and break boundaries with innovative and exciting new trends, setting benchmarks for others to follow and measure themselves by.

Strawberries and Sunshine

Verdant vineyards, majestic mountains, strawberry fields The ICA campus is situated on the historic Spier Estate near Stellenbosch. Surrounded by the beauty of nature and the bounty of the famous Cape Winelands, the ICA experience stimulates the senses and creates memories far beyond the world class training provided. Each season brings new flavours and tastes. This is simply paradise for anyone with a passion for fine food and wine.
